Baking for the holidays (I am referring to baking goodies, as getting baked during the holidays is a given, if I want to make it through them sane) is a great way to show people you care, by taking time out to bake some goodies (also cheap and easy). What person (unless they are weirdos) doesn’t like fresh baked goodies? You can also make great holiday gift baskets with goodies. Baking is a great, cheap and easy gift idea too (whether or not you like them enough to bake them magic goodies).
If you like to bake (not to be confused with getting baked ~ but combining both can always be a good times), then you’re in luck! I’m going to share one of my favorite holiday recipes (or non-holiday recipe if you want something yummy or just have the munchies).
Magic Pumpkin Chip Cookies with Walnuts. They are as easy as apple pie (easier, because apple pie is kind of a pain in the ass to make).
You will need:
1 cup pumpkin (canned okay)
2 cups sugar
4 cups flour
1 cup magic oil (reg veg oil is fine but then the recipe is called Borning Pumpkin Chip Cookies with Walnuts)
2 tbsp milk
1 tsp baking soda (not to be confused with baking powder)
4 tsp baking powder (not to be confused with baking soda)
2 tsp ground cinnamon
2 tsp vanilla (pure is better than imitation)
1 tsp salt
2 cups small chocolate chips (don’t go eating the chocolate chips, either, stoner!)
1 cup chopped walnuts
Preheat oven to 350 degrees.
Combine pumpkin, sugar, flour and oil in large mixing bowl, mixing well. Add eggs and milk, again mixing well. Add baking soda, baking powder, cinnamon, vanilla and salt, mix well (yes, mix it well again). Stir in the chocolate chips and walnuts. (Chocolate chips and walnuts are optional, but if you take them out, then they are no longer Magic Pumpkin Chip Cookies with Walnuts, but Really Boring Pumpkin Cookies).
Spoon tablespoons of cookie dough onto a greased cookie sheet, leaving some room for them to expand a bit (otherwise they may stick together). For larger cookies put in oven for 20-22 minutues. For smaller cookies put in oven for 10-12 minutes. (Make sure you always check on the cookies a few minutes early to avoid burning. Cookies should only have a light to medium golden color to them.) Remove from oven and let cool (or don’t, but don’t blame me if you burn your tongue because you had the muchies and couldn’t wait). Enjoy your Magic Pumpkin Chip Cookies with Walnuts.
